Vegan Mediterranean Quinoa Salad with Chickpeas

This tasty high-protein Vegan Mediterranean Quinoa Salad is made with quinoa, chickpeas, tomatoes, onion and a few herbs and seasoning

Ingredients: #Quinoa- 1 1/2 cup (cooked) #Chickpeas- 1 can #Cherry tomatoes- 1 cup (quartered) #Olives- 10 (black or green) #Fresh basil leaves- 1 1/2 cup #Purple onion- 1/2 (small) #Fresh lemon juice- 1 tbsp #Olive oil- 1 tsp #Balsamic vinegar- 1 tsp #Red wine vinegar- 2 tsp #Salt- 1 1/2 tsp or to taste #Black pepper- 1/3 tsp

1. First rinse the chickpeas well with water.

2. Chop all the vegetables, including cherry tomatoes, onions, olives, fresh basil leaves and any other vegetables of your choice.

3. In a large bowl add cooked quinoa, chickpeas and chopped vegetables.

4. Now add lemon juice, olive oil, vinegar, salt and pepper.

5. Healthy gluten-free high- protein quinoa salad is ready to serve.

6. This quinoa salad can be served with any main dish, fresh bread or tortilla wraps.
