Roasted Chicken Thighs By Martha Stewart

Ingredients: 2 1/2 pound chicken thigh 1 pint grape tomatoes chopped lengthwise 1/2 cup Spanish olive. pitted

3 tbsp extra-virgin olive oil 6 shallot, halved lengthwise Salt and pepper 3 spring thyme Feta cheese for garnish Mint leaves for garnish

Instructions: 1. Preheat oven to 375 degree. 2. In a large bowl add chicken, oil, olives, tomatoes, thyme and shallot.

3. Season with salt and pepper, stir well. 4. Transfer this mixture to a rimmed baking sheet, spread well.

5. Place skin side up in a single layer. 6. Roast it for 30-35 minutes or until a thermometer inserted into chicken thigh.

7. Transfer chicken thigh to a platter, cover with foil. 8. Place vegetables to oven and roast it for 10 minutes or until golden brown patches occur.

9. Place chicken thigh and vegetables to a platter. 10. Season with salt and freshly ground pepper. 11. Garnish with feta and mint. 12. Enjoy!!!
