Ingredients:18 graham crackers2 sweet potatoes1 stick + 3 tbsp unsalted butter1 cup sugar
1 1/2 cups ricottasalt4 large eggs1/2 cup plain Greek YogurtWhipped cream, lightly sweetened
Instructions:1. Preheat oven to 375 degrees.2. Bake sweet potatoes for 1 hour or until tender.
3. Remove from oven, discard skin and mash well.4. Pulse graham crackers until finely ground.
5. Add 1 stick butter, 1/4 tsp salt and 1/3 cup sugar, pulse to combine well.6. Tightly press mixture into a baking dish.
7. Bake it for 10-12 minutes or until crust is set.8. Take out from oven.9. Reduce temperature to 325 degrees.
10. Meanwhile , puree sweet potatoes, ricotta, eggs, yogurt, 1/4 tsp salt, 2/3 cup sugar and remaining butter.
11. Pour over crust and bake for 35 minutes or until set.12. Let it cool for 30 minutes, then refrigerate until cold.13. Cut and top with whipped cream.
