Amazing Turkey Brine Method
Ingredients:
1 1/2 cups kosher salt
7 quarts water
2 tbsp dried coriander seeds
6 bay leaves
1 tbsp dried juniper berries
2 tbsp black pepper corns
1 tsp brown mustard seeds
1 tbsp fennel seeds
1 fresh whole turkey, neck and giblets reserved, liver reserved for stuffing
2 medium onions, sliced
1 bottle dry Riesling
6 garlic cloves
1 bunch thyme
Instructions:
1. In 1 quart water, add bay leaves, salt and spices.
2. Stir well and simmer until salt has dissolved.
3. Keep aside to cool.
4. Line a 5 gallon container with a oven roasting bag.
5. In bag place turkey.
6. Add salt mixture, remaining water and other ingredients.
7. Turkey should submerged, if it is not submerged, weight it with a plate.
8. Tie bag and refrigerate 24 hours, flip turkey once.
