Amazing Vegan Sweet Potato Chili Recipe

Ingredients: 2 dried ancho chiles, stems removed and split lengthwise 2 tbsp extra virgin olive oil 1 medium onion, chopped

Salt and pepper 3 garlic cloves, minced 2 tsp chili powder 2 tbsp tomato paste 1/8 tsp cayenne pepper 1 tsp ground cumin

1 1/2 pounds sweet potatoes, peeled and chopped 1 can black beans, drained and washed Avocado, scallions Crushed  corn chips for serving

Instructions: 1. In a saucepan, heat oil over medium heat. 2. Add chilies, garlic, onion, and salt and pepper. 3. Stir well and cook until onion is softened.

4. Add tomato paste and all  spice powder, cook for 2 minutes. 5. Add in sweet potato and 4 cups water.

6. Let it come to a boil, then reduce heat and simmer for 20-25 minutes. 7. Let it cool for 5 minutes.

8. In a blender, add 1 cup sweet potatoes and 1 cup cooking liquids, puree until smooth. 7. Add to saucepan along with beans.

10. Cook for 5 minutes or until beans are warmed. 11. Add seasoning according to your taste. 12. Serve with scallions, avocado and corn chips.
