Delicious and Healthy Meat Lasagna
Ingredients:
1 tbsp olive oil
1 small eggplant, peeled and cut
1 medium onion, chopped
Salt and pepper
2 garlic cloves, minced
1 can tomato puree
1/2 pound ground sirloin
1/4 cup + 2 tbsp grated parmesan
1 pint cottage cheese
1/2 cup shredded part skim mozzarella
6 whole wheat lasagna noodles
Instructions:
1. Heat oven to 375 degrees.
2. Place noodles in a baking dish, cover with hot water, keep aside to soften.
3. Heat oil in a heavy pot.
4. Add eggplant, onion and garlic, season with salt and pepper.
5. Cook for 8-10 minutes.
6. Add sirloin and cook for 5 minutes.
7. Add tomato puree and cook for 3-5 minutes.
8. Season with salt and pepper.
9. Combine cottage cheese, 1/4 cup parmesan cheese, salt and pepper in a bowl.
10. Now discard water from noodles.
11. Spread 1/4 cup meat sauce in bottom of dish.
12. Add 4 noodles halves and 1/3 cheese mixture on top.
13. Then add 1/3 meat sauce.
14. Repeat this process with remaining ingredients.
15. Sprinkle with mozzarella and parmesan.
16. Bake for 30-35 minutes.
17. Let it cool for 10 minutes before serving.
