Delicious Double Roast Chicken Recipe
Ingredients:
6 beets, peeled and quartered
6 medium onions, peeled and quartered
8 carrots, peeled
8 new red and white potatoes
1 acorn squash, sliced and halved
2 chickens, giblets removed and washed
2 lemons, quartered
Salt and pepper
3 tbsp unsalted butter
8 springs fresh thyme
Instructions:
1. Preheat oven to 425 degrees.
2. Arrange all vegetables in a 12/18" roasting pan.
3. Over vegetables, place chickens.
4. Sprinkle salt and pepper in cavities.
5. Stuff cavities with lemon, onion, and thyme.
6. Tie leg together with a twine.
7. Place remaining vegetables around chickens.
8. Apply butter over chickens.
9. Sprinkle salt and pepper.
10. Roast chickens for about 1 hours.
10. Or until golden and crisp, and jukes release from chickens, when pieced.
11. Take out from oven and enjoy.
