Easy and Delicious Vegetarian Black Bean Chili

Ingredients: 1 small onion, diced 1 tbsp olive oil 2 cloves garlic, minced

Salt and pepper 2 carrots, sliced 2 zucchini, thinly sliced 1 tbsp chili powder 1 tsp cumin

2 cans black beans, drained and rinsed 1 can crushed tomatoes 10 ounces frozen corn kernels

Instructions: 1. In a heavy pot heat oil. 2. Add garlic and onion, season with salt and pepper. 3. Stir and cook for 4-5 minutes.

4. Add carrots, zucchini and chili powder and cumin powder. 5. Stir and cook for 5 minutes or until carrots are crisp tender.

6. Add tomatoes, beans, corn and 1 cup water. 7. Cook for about 9-10 minutes or until slightly thickened and carrots are soft.

8. Yummy black bean chili is ready. 9. You can top it with sour cream, tortilla chips, scallions and diced avocado.
