Easy Banana Muffins By Martha Stewart

Ingredients: 1 cup packed light brown sugar 1 large egg 4 ripe bananas + 1 for garnish 1/2 cup canola oil

1 cup whole wheat flour 1 cup all purpose flour 1 tsp baking soda 1 tsp baking powder 1/2 cup sour cream 1/2 tsp salt 1 tbsp pure vanilla extract

Instructions: 1. Heat oven to 350 degrees. 2. Line a muffin pan with paper liners.

3. Peel and beat bananas until mashed. 4. Add eggs, brown sugar and oil, beat until smooth.

5. Add both the flours, baking soda, baking powder and salt. 6. Beat until smooth. 7. Beat in sour cream and vanilla.

8. Pour mixture into muffin pans. 9. Slice and add banana. 10. Bake for 25 minutes.

11. Remove from oven and place on wire rack to cool completely. 12. It can be stored, covered at room temperature.
