Easy Coconut Lime Berry Cake
Ingredients:
1 3/4 cups + 1 tbsp all purpose flour
3/4 cup unsalted butter + more for dish
1/2 tsp coarse salt
2 tsp baking powder
1 cup + 1 tbsp sugar
1 cup packed sweetened shredded coconut
3/4 cup buttermilk
3 large eggs
2 tsp finely grated lime z + 2 tbsp lime juice
3 cups mixed berries3 tbsp amber
rum or orange juice
Instructions:
1. Heat oven to 350 degrees.
2. butter and dust a 9/13" baking dish.
3. Combine together flour, baking powder, coconut and salt in a bowl.
4. Beat butter and 1 cup sugar until fluffy.
5. One by one add eggs and beat until combined well.
6. Add flour mixture in two batches alternating with buttermilk.
7. Mix everything well until combined.
8. Ad batter into prepared dish.
8. Toss together 1 tbsp flour, berries, rum and sugar in a bowl.
10. Add berries over batter.
11. Bake for about 35 minutes.
12. Let the cake cool completely.
