Flavorful and Moist Pumpkin Cupcakes
Ingredients:
1 tsp baking soda
2 cups unbleached all purpose flour
Baking powder
1 tsp kosher salt
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp freshly grated nutmeg
1 cup granulated sugar
1 cup packed light brown sugar
4 large eggs, lightly beaten
2 sticks unsalted butter
1 can pumpkin puree
Marzipan pumpkins
Cream cheese frosting
Instructions:
1. Preheat oven to 350 degrees.
2. Line 2 cupcake pans.
3. Combine together, flour, baking powder, baking soda, cinnamon, ginger, allspice and salt
4. Whisk butter and both sugars, pumpkin puree and eggs in a bowl.
5. Add dry mixture and combine until smooth.
6. Divide cake batter evenly among liners.
7. Fill halfway.
8. Bake for about 20-25 minutes
9. Or until tops spring back, when lightly pressed.
10. Cool completely.
11. Decorate with frosting and marzipan pupmkins.
