Healthy and Delicious Chicken and Kale Casserole

Ingredients: 3/4 pound large pasta shells Coarse salt and ground pepper 1 large yellow onion, diced

2 tbsp unsalted butter 3 garlic cloves, minced 2 cups shredded cooked chicken 2 bunches kale, coarsly chopped

3 tbsp lemon zest, finely grated 1 container part skim ricotta 3/4 cup parmesan, grated

Instructions: 1. preheat oven to 350 degrees. 2. Cook pasta according to package instructions until al-dente.

3. Drain pasta, keep aside 4. Melt butter in a large skillet over medium heat. 5. Add onion and garlic, cook for 4-5 minutes

6. Add kale and cook until slightly tender. 7. Add cooked pasta, stir well. 8. Add in chicken, lemon zest, ricotta and 1/2 cup parmesan.

9. Season with salt and pepper. 10. Place mixture to a 9/13" baking dish. 11. Sprinkle with 1/4 cup parmesan on top. 12. Bake for 30 minutes or until golden.
