Healthy Greek Lemon Chicken Soup

Ingredients: 8 ounces boneless, skinless chicken breast, trimmed of fat 5 cups low sodium chicken broth 2 large eggs, beaten

1/2 cup orzo 1/4 cup fresh lemon juice Freshly ground pepper 1/2 cup fresh dill springs

Instructions: 1. In a 4 quart pot add chicken broth, simmer over high heat. 2. Lower the heat and simmer chicken for abour 15 minutes.

3. Take out chicken to a bowl, reserve broth. 4. Shred chicken with a fork after cool slightly. 5. In a saucepan boil water.

6. Add orzo and cook until al dente. 7. Drain and add to chicken broth. 8. Gently simmer on low heat.

9. In a bowl, beat lemon juice and eggs until smooth. 10. Add a ladle of hot broth to egg mixture., whisk well.

11. Add egg broth mixture to broth pot. 12. Mix in dill. 13. Season with salt and pepper. 14. Serve hot.
