How to make Romesco Sauce at Home?

Ingredients: Red bell peppers (capsicum)- 2 Tomatoes- 2 Long red chilli- 1 (deseeded and roughly chopped) Sweet paprika- 1 tsp Almonds- 25g (roasted & chopped) Hazelnuts- 25g (roasted & chopped)

Ingredients:: Garlic cloves- 4 (peeled & roughly chopped) Flat leaf parsley- 1/4 cup (roughly chopped) Red wine vinegar- 1 1/5 tsps Extra virgin olive oil- 3 tbsps Kosher salt- 1 tsp or to taste

First we need to roast the red bell peppers and tomatoes.

Roast it on open flame until black patches appears and red bell peppers and tomatoes become soft.

When they have roasted well, take out and dip in cold water for few minutes. Peel off peppers and tomatoes.

Remove the seeds and roughly chop them into small pieces.

Add all the ingredients in grinding jar or bowl of food processor.

Grind or pulse them into fine smooth paste or to your desired consistancy. Taste and adjust seasoning.

Here is your yummy Romesco Sauce is ready to enjoy.

This is a versatile sauce or dip to use with veggies, bread and paste etc.

It can also be paired well with vegetable kabobs.
