Mediterranean Tuna Noodle Casserole By Martha

Ingredients: 1 pound wide egg noodles Coarse salt and ground pepper 1/3 cup olive oil + more 1/2 cup all purpose flour

2 red bell pepper, thinly sliced 5 cup whole milk 1 can artichoke hearts, drained and sliced

4 cans tuna in olive oil, drained 5 scallions, sliced 1/2 cup grated parmesan.

Instructions: 1. Heat oven to 400 degrees. 2. Grease two 8" square baking dish.

3. Boil noodles according to package instructions until al dente. 4. Meanwhile, in a heavy pot, heat oil.

5. Add bell peppers, season with salt and pepper. 6. Cook it for 5-6 minutes.

7. Slowly add milk and mix until smooth. 8. Cook until mixture comes to a simmer. 9. Turn off the heat.

10. Add this mixture to noodle (drained) pot. 11. Add tuna, scallions, and artichoke hearts. 12. Add salt and pepper, toss well.

13. Add this mixture to prepared pans. 14. Bake for about 20 minutes or until golden and bubbling.
