Perfect Chicken Enchiladas with Green Sauce
Ingredients:
3 pounds bone in, skin on chicken breast
5 garlic cloves
Salt and pepper
16 ounces medium green salsa
3/3 cup heavy cream
12 corn tortillas
12 ounces Monterey
1/2 cup fresh cilantro, chopped
Jack cheese, shredded
Instructions:
1. Preheat oven to 450 degrees.
2. Season chicken with salt and pepper.
3. Place on rimmed baking sheet with garlic.
4. Bake for 25-30 minutes.
5. Combine cream and salsa in a bowl.
6. Reduce temperature to 350 degrees.
7. Let the chicken cool slightly, shred meat.
8. Peel and slice garlic
9. Combine chicken, 1/2 cup salsa mixture and garlic in a bowl.
10. Wrap tortilla flat in a damp paper and microwave for 1 minute.
11. Dip tortilla in salsa mixture, fill with chicken mixture.
12. Repeat this process with all the tortillas.
13. Roll up and arrange each enchiladas in a 9/13" baking dish.
14. Add remaining salsa mixture and cheese on top
15. Bake for 40-45 minutes.
16. Sprinkle with cilantro and serve.
