Ingredients: 1 cup all purpose flour + more for pan, sifted 1/2 cup unsalted butter + more for pan

2/3 cup sugar 4 large eggs 1/4 tsp salt 1 tsp lemon zest, grated 1 tsp pure vanilla extract

Instructions: 1. Preheat oven to 375 degrees. 2. Grease and dust madeleine pans.

3. Melt butter, let it cool. 4. Whisk eggs, salt and sugar until thick and smooth.

5. Add vanilla and lemon zest, beat well. 6. Slowly add flour mixture, mix well

7. Add butter (keep in mind that butter should not settle in bottom). 8. Spoon batter  into prepared pans.

9. Bake for 7 minutes or until golden. 10. Take out from pan, let it cool on racks.
