Tomato And Olive Penne By Martha Stewart
Ingredients:
1 pound penne
1/4 cup olive oil
Salt and pepper to taste
2/3 pound cherry tomatoes, halved
2 garlic cloves, sliced
1/4 tsp crushed red pepper
1 tsp oregano
1/4 cup Kalamata olives, sliced
1/4 cup grated parmesan + more for serving
1/4 cup fresh parsley, chopped
Instructions:
1. In a pot add water and salt, bring it to boil.
2. Cook penne for 10-12 minutes or according to package directions.
3. Drain and keep aside.
4. In a skillet heat olive oil.
5. Add garlic and cook until golden.
6. Add cherry tomatoes, red pepper, oregano, salt and pepper.
7. Stir well and cook until tomatoes turn tender and juices run.
8. Add boiled penne, olives and parsley.
9. Add Parmesan and stir to combine well.
10. Serve hot with more cheese if needed.
