Tropical Baked Oatmeal with Greek Yogurt:This delicious and healthy breakfast baked oatmeal with Greek yogurt is perfect for morning breakfast. It is made by baking fruits into the oatmeal then topped with fresh fruits.
Ingredients:2 cups rolled oats1/2 tsp baking powder1 tsp cinnamon powder1 1/2 cup milk or fruit juice1/4 tsp salt
2-3 tbsp honey1 cup Greek yogurtLemon or orange zest1 1/2 cup sliced pineapple1 1/2 cup sliced strawberries1/2 cup coconut chips or shredded coconut
Instructions:1. Preheat the oven to 350 degree F2. Grease the baking dish with butter or non-stick spray.
3. In the baking dish add oats, baking powder, cinnamon powder, milk, honey, yogurt, salt, citrus zest and vanilla extract (optional).
4. Combine all the ingredients well.5. Top it with half of the sliced pineapple and strawberries.6. Mix slightly.7. Top it with shredded coconut.
8. Bake it for 35-40 minutes or until oatmeal bubbling and coconut is toasted.9. Add lemon or orange juice to pineapple and strawberry slices, mix well.10. Garnish the baked oatmeal with these fruits and serve.
